Our Current Lineup
Since all we do here is produce key lime pies, the lineup deals with the different sizes we make. If you’re hoping to find lotions, marinades, gumdrops, taffy, fudge and more, you won’t find it here until we are making it ourselves using 100% pure, fresh squeezed key lime juice.
We start with our classic 10-inch key lime pie. This is the mainstay of our business, selling to restaurants, hotels and caterers. This pie typically serves eight slices and is delivered ungarnished. Each and every 10-inch key lime pie is made in a hand-formed crust that is baked to a beautiful mahogany brown before being filled with our fresh made custard filling. The crust is durable enough for plating (delivered unscored) and ready to be dressed up as you wish, a dollop of whipped cream, naked or with the full regalia. Our commercial customers have come to rely on the consistency of our pies, we hand make these in small batches of 12-pies at a time. This ensures that our product will always be the same.
Each 10-inch pie is packaged in a durable corrugated box and individually shrink-wrapped to keep that dreaded refrigerator-funk away. The pies freeze well with minimal water-movement and loss of texture. If you’re in the restaurant business and looking for the absolute best, freshest key lime pie, you’re looking in the right place, and you’ll find our prices to be quite competitive. Our 8-inch key lime pie is a favorite for the retail customer. Same great pie but a little less guilt. Perfect for a small family or a couple who might want seconds. The same standards as our 10-inch pie; still made in small batches, still made with our own in-house buttery crust, just on a smaller scale. Packaged for retail in a plastic clamshell, label with ingredients and nutritional information. Master cases of 12 or 24 pies.
Our 4-inch tarts are the perfect single-serving size for any catered affair or on a banquet menu. Baked and delivered fresh (although they do freeze quite well) and never pulled from frozen stock, we’re able to accommodate your foodservice needs whether for a party of 10 or 1000. If you are a restaurant concerned with portion control, the individual tarts could be your answer. Packaged 10-per box in master cases of 60 or 120 pieces (six or 12 boxes). We also sell these individually packaged for retail, but this item (as with our eight-inch pie).
Additionally, we have a three-inch “teaser”, better suited for tastings or when smaller servings are appropriate.
None of our products are garnished or scored, they are all delivered naked. They do present you with the capability to dress them up as suits your needs. Peter Luer simply adds a mound of schlog (their version of whipped cream), The St. Regis decorated the tarts with a dollop of cream, a drizzle of raspberry puree, a whole blackberry and sprig of mint. The possibilities are endless.
